There’s something about a warm waffle paired with a cold scoop of ice cream that just hits the spot in the summertime. For as long as I can remember, this has always been one of my favorite desserts—something I make a point to enjoy at least once every summer. This week’s blog post is all about waffles and ice cream, and what better place to start than with Waffle Cabin?
Waffle Cabin is a food truck that specializes in waffles and ice cream. I first stumbled upon this truck last week at Musikfest in Bethlehem, an event I’ve been attending every year since I was born. I wasn’t expecting to see a food truck from the Philadelphia region there, but when I did, I knew I had to give it a try. The truck was already busy when I arrived—a sign that I was in for something good. The menu offered plenty of tempting options, each one featuring their signature Belgian sugar waffles paired with a different flavor of ice cream. I decided to go with the Vanilla Crisp, which looked like the perfect treat for a hot summer evening. Despite the crowds, the workers were efficient, and I don’t think I waited more than five minutes for my food.
The Vanilla Crisp features a freshly made Belgian waffle topped with cinnamon sugar, caramel drizzle, vanilla ice cream, and whipped cream. The waffle itself is golden and crispy on the outside, with a soft interior perfectly sweetened by the cinnamon sugar coating. You can tell the workers take care in cooking and coating these waffles just right. The vanilla ice cream on top was smooth and creamy, adding a cool contrast to the warm waffle. The caramel drizzle brought another layer of sweet, buttery flavor that made each bite even more satisfying. And let’s not forget the whipped cream—there’s plenty of it, just the way I like it.
If you have a sweet tooth and love a good Belgian waffle, Waffle Cabin is a food truck I highly recommend. The Vanilla Crisp was amazing, and the menu is filled with plenty more delicious options that I can’t wait to try in the future.
