Pepperoni & Cheese Pizza - J Rad’s Wood Fired Pizza

Everyone loves pizza—myself included! With so many unique ways to make it, from toppings to cooking styles, there’s a pizza out there for just about everyone. That’s why it’s always exciting to stumble upon a new pizza food truck, especially when its specialty is wood-fired pizza. This week, we’re talking about J Rad’s Wood Fired Pizza.

J Rad’s Wood Fired Pizza is a food truck equipped with a full wood-fired oven, allowing its workers to prepare and bake each pizza from scratch right on-site. This was the second truck I discovered at Keystone North Church’s launch party in Harleysville a few weeks ago. As I approached the truck, I noticed a good-sized crowd, which is always a promising sign of the truck’s popularity. As I browsed the menu, I saw words like “fresh” and “special” in the descriptions of most of their pizzas, hinting that I was in for something unique. I decided to go with their Pepperoni & Cheese Pizza—one of my all-time favorites. After placing my order, I received a buzzer, which allowed me to walk around while waiting. About ten minutes later, my buzzer lit up, and it was time to pick up my pizza.

The Pepperoni & Cheese Pizza is a personal-sized pie cut into six slices, topped with sliced pepperoni, red sauce, fresh mozzarella, and a special blend of cheeses. From the first bite, I was blown away by the flavor of the tomato sauce. It tasted like a fresh, homemade Italian tomato sauce—the kind you can tell the team put extra care into perfecting. The mozzarella cheese was soft and creamy, stretching off the pie after every bite. The pepperoni was plentiful and packed with its own delicious, slightly spicy flavor. Some of its flavor even melded into the cheese, which was a nice touch.

The crust was another highlight. It was light, soft, and had just the right amount of char, without being overly crispy. I’m not too picky about pizza crust, but the texture of this one was perfect. I ended up splitting the pizza with my wife, which was definitely enough to satisfy both of us.

All in all, J Rad’s Wood Fired Pizza more than delivered on flavor and quality. While this truck is based out of the Lehigh Valley, it was a pleasant surprise to find them in Harleysville. It looks like they tend to travel around to different events, so if you’re a pizza lover like me, be sure to check them out on Instagram to see where they’ll pop up next!
