Peach Cobbler - Waffle Cabin

Since starting this blog in April, I’ve featured a new food truck every week. This week, however, I thought it would be fun to revisit a truck I’ve already written about to highlight a different item on the menu. We’re returning to Waffle Cabin, a food truck best known for its waffles and ice cream.


I first tried Waffle Cabin back in August, and it quickly became a favorite. I stumbled upon them again at St. Maria Goretti Church during its food truck festival, and it was the third and final truck I decided to sample that night. It’s clear that this truck is popular, as there was a long line in front of it throughout the evening. Each item on the menu features their signature Belgian sugar waffles, paired with a variety of ice cream flavors and toppings. This time, I opted for their Peach Cobbler. As a huge fan of peach cobbler, I was excited to try Waffle Cabin’s take on it. Though the line was long, the team was efficient in taking orders and serving customers. After a few minutes, I was ready to dig in.




The Peach Cobbler consists of a freshly made Belgian waffle topped with peach ice cream, graham crackers, caramel sauce, and whipped cream. I loved the flavor and texture of the waffle on my first visit and enjoyed it just as much this time around. The waffle had the perfect balance: crispy on the outside and soft and fluffy on the inside. The peach ice cream was a standout, tasting just like a fresh peach and featuring little frozen peach bits scattered throughout. The graham crackers were a pleasant surprise, adding a nice crunch that paired well with the sweet caramel sauce. And, of course, no waffle-and-ice-cream pairing is complete without a swirl of whipped cream on top. Altogether, this Peach Cobbler waffle exceeded my expectations.


If you ever come across Waffle Cabin and are craving something sweet, I highly recommend giving them a try. Their waffles are amazing, and it’s clear that the team knows how to craft a perfect Belgian waffle. With a menu full of unique waffle-and-ice-cream pairings, there’s something to satisfy everyone’s sweet tooth.
