It’s safe to say that pizza holds a special place in the hearts of both kids and adults. While I love a good slice as much as anyone, I tend to hold pizza to a higher standard than a lot of my friends. I’ve been eating pizza my whole life, and finding a pizza that stands out among all the others can be a challenge, especially with the plethora of options available. Enter Pitruco Pizza: a food truck specializing in brick oven pizza.
Pitruco Pizza operates from a massive food truck equipped with a full brick oven. Last week, I swung by Ten7 Brewing Company in North Wales, where I noticed they were stationed for the afternoon. Their menu is pretty straightforward, but I decided to order the Margherita. Not to be confused with the margarita cocktail, a Margherita pizza features tomato sauce, mozzarella cheese, and fresh basil. Each pizza from this truck is made to order, so I watched as the workers prepared, baked, and served it up in one of their signature pizza boxes in just a few minutes.
The pizza was about twelve inches in diameter, which is pretty big for a personal pizza, and was cut into four slices. From the first bite, I knew this pizza was going to be unique. Let’s start with the crust, which had a perfect mix of softness and crispiness. The flames from the brick oven slightly charred the exterior of the crust, while the interior remained soft. The sauce had such a distinct tomato flavor, unlike anything I’ve tried before. When paired with the mozzarella and basil, this pizza gave off the vibe of a fancy Italian restaurant. The balance of all three ingredients was spot on, so I never felt like one was overpowering or lacking. In my opinion, this is how all pizza should taste.
